Sigh........ 10 hour work day. Race home pack up Mom and wife, drive 45 minutes to sit thru 2 hours of grade school Christmas program (2 grand-kids, 2 separate programs).

Now I'm home. My dinner? Tequila and peanuts........  @)

Pan fried fish cakes made from crappie fillets,fine mince of red bell pepper,celery,onions, mix with egg and bread crumbs, black pepper,paprika,old bay,rolled in Panko and pan fried. Tater tots,fresh made coleslaw,wash it down with a cold one.

OK. I got dinner tonight.

Homemade marinara from my garden fresh Opalkas, fresh mushrooms and sausage. I like linguine, some steamed chopped spinach, cheese, the marinara and more cheese. Made some garlic bread. A drizzle of olive oil, spread on some roasted garlic puree (I make that too), a pinch of Italian blend herbs, thinly sliced fresh Roma, a little salt/pepper and cheese......... That and a glass of Washington state Cab and I'm good to go.

Much as I enjoyed last night, made up for the peanuts and tequila........  ;D

Braised beef with carmalized onions, chicken with cider cream sauce mixed root veggies and mashed potatoes.

Here you go:
Mom's Smoking Pittsburgh Chicken:This came from my mom in the 60's,she passed away Halloween day 88'.
This is my fav dish. Enjoy!
1.Take a 9wX13hX2deep" pan and layer bottom of pan with Chipped Beef.
2.Debone and remove skin from a dozen chicken thigh's.
3.Make chicken stuffing but only add enough(1/2) water to make it stick together.
4.Add stuffing(about 2 tablespoons) to chicken thigh enough that you can make the thighs into small rolls.
5.Lay stuffed thighs into 2 rows.
6.Make 1 can of mushroom soup with 1/2 can of water and add fresh chopped mushrooms if you want.
7.Pour soup mixture evenly across the thighs and push mushroom chunks between thigh's
7.Cover completely with bacon strips.
8.Do not add salt! There is ENOUGH from the other ingredients.
9.Cover bottom of oven with foil for easy clean up cause the pan will be full.
10.Bake in oven at 350 deg for 45min to an hour.
11.It will bubbling when done.
12. Let cool completely and serve dollops of sour cream.
Enjoy!!!

Light  supper tonite.... Stuffed mini-peppers. I like these when they go on sale. Cut the tops off, gut 'em, push in a piece of block cheese then use a butter knife to press cream cheese in the crevices. We usually make a few jalapenos with cheddar and a few with some meatloaf mix or bratwurst or some other kind of fresh sausage.

I make a pepper stand with a paper egg carton wrapped in HD foil. put an "X" where the peppers go and they stand up purty  :thumbsup:. Grill proof too....

Of course, the obligatory martini is present....... ;D

Bacon wrapped deer back straps on the grill. My first try at it. I have a 3 burner natural gas grill. I lite the left burner at a little above medium heat and placed the meat on the right side of the grill. Tried to keep the right side of grill at 240 degrees. They cooked in around an hour (140 degree internal temp). Onion powder, granulated garlic powder, Jane's mixed-up salt, fresh ground pepper and 3 chunks maple wood for a little smoke.

 i just did the same with a venny tenderloin.  i like to wrap lots of things in bacon but always fry the bacon a bit before hand to make sure it gets crispy.  also broil the bacon wrapped anything for the last 5-10 min.
