What do the pros here use when deep frying their catch? I don't mind the ole fry pan with oil, but the mess is makes is a pain to clean up. Looking for one of them covered units (are the worth it?)
Let me know your thoughts/recommendations.

The best outdoor fryer i have used is the Cajun Fryer out of Homer, La. They are pricey but work great. The inner element that is heated by propane runs through the center of the oil,which lets the loose batter fall to bottom in cooler oil so it burns less.
