FISH FRY RECIPIES

  Just wondering how all you outdoor gourmet's cook up a good fish feast. What fish are you using,and how are you preparing it(if that's not top secret info).  Thanks!  Enjoy the 2009 season! :tipup:

what i do is

1 cup yellow corn meal (yellow is important)
1 cup flour
cajun seasoning enough so i can see some flavor (yes i know i said see some flavor)
and favorite beer

mix up until it is smooth and a little drippy and toss in some oil on medium to medium high

what i do for my crappie and gils long john silvers aint got nothing on me i tell ya

Mine is fairly simple.  Egg mixed with a little milk....put in bowl....dip fillets....place breadcrumbs on plate....dip fillets in breadcrumbs and place in shallow pan with hot oil.  Fry til golden brown.  Man....I'm hungry.
That taxidermy man back home gonna have a heart attack when he see what I bring'em!!

1 tsp baking powder
1 cup flour
1/2 cup corn starch
salt
pepper
seasoning salt
X amount of BEER

Mix dry ingredients in a bowl. Pour beer in a little bit at a time so that it is a thick liquid. like really thick, it coats the fish better and you get a better end product. Beer+baking powder makes the batter light and fluffy, instead of heavy. Coat fish or onions or anything you feel like and DEEP FRY. Its important to slowly add the beer because if you add too much you cant un-add the liquid so go slow. Deep frying is important because you cant pan fry this one. When putting the fish into the fryer slowly immerse them and hold it from the sides for about 5 seconds. This way it starts to thicken/cook and when you let it go it wont stick to the basket. Put seasoning salt IMMEDIATLY after the fish comes out of the fryer so it sticks better. Its delicious.

 soaked in milk, then battered in fish crisp then deep fried
Theres only 3 seasons..open water, hunting and icefishing!

Tried this this week. Its how I do other fish so figured it'd work here.


For Crappie I just pan fried it until its white in peanut oil and server with lemon wedges.

For perch I do a sparse cajun or chipotle dry rub, followed by a light coating of corn starch. Then pan fry it in olive oil (low temp keeps from over cooking the fish but still crisps up the corn starch).

got a hankering for a fry tonite
flash frozen fish, still have some from last ice. 
golden dipt beer batter,
one miller high life (the champagne of bottled beer! lol) oh, for cooking purposes,  ::)
fresh oil heated to perfection,
fresh hamburger buns, the softer the better!
tartar sauce
uncle franks hot sauce
cook and enjoy!
If you can get here in a half an hour, you are welcome, after then it will be gone!
