Chokecherry wine recipe

I know this isn’t ice fishing related, but I have a bunch of chokecherries and want to make some wine out of them.  I have looking for a recipe for 5gallon batch to try.  If anyone has a recipe that they would like to share I would greatly appreciate it.

I’ve never done chokecherry, but here’s a basic recipe I follow. I recommend using a brew bag for the fruit.
Depending how acidic they are, 5-8lbs pounds of frozen-thawed cherry (freezing breaks fruit down and allows juices to extract easily) and 3qts of water per gallon of wine you want to make. Let it soak with a campden tablet per gallon for 12hrs to sanitize, then add peptic enzyme and wait another 12-24hours. Then add Enough sugar (or honey for a mead, cherry mead is also called Vikings blood) to bring your must to the desired gravity for the ABV, usually about 2lb per gallon, but use a hydrometer. Hydrate and pitch your yeast of choice, then punch down the floating fruit daily.  Make sure to remove fruit/rack 7-10 days in, leaving fruit in too long can cause bitterness.  Using yeast nutrients, and degassing daily, till 2/3 of the sugars are gone will help make a smoother product without aging as long.
