Summer cucumber dish

Refrigerator pickles. 2cups of white vinegar, 2 cups white sugar, 2 Tbsp salt, 1 Tbsp celery seed, 1 cup sliced onions, 6 cups sliced thin cucumbers. Boil ingredients, Let cool, Pour over cucumbers and onions. Refrigerate. Can last up to 30 days. But never makes it past day 2 at my house.

That sounds good ...cukes should be over running some folks gardens by now ...some one posted a cucumber salad receipe some time back ..tried that ..very nice and refreshing taste

Here is another one. Peel and slice two or three cucumbers. Then slice a med to large onion. Mix in a 16 oz container of your favorite sour cream. Refrigerate till good and cool. Salt and pepper to taste when on your plate.

A cool summer Salad

I came up with this many, many years ago...great along with BBQ'd ribs or just about anything off the grill on those hot Summer days.

Reb's 'Cukes 'n Sauce



1 very large cucumber, peeled and sliced very thin
1 medium purple onion, sliced thin
1/2 cup Miracle Whip (not the Lite)
1 cup of sour cream
1 1/2 Tbsp sugar
1/4 tsp fresh Dill weed
1/4 tsp Onion powder
1/8 tsp garlic powder
1/2 tsp salt
7 Tbsp white vinegar (1/4 cup +3 Tbsp)

Mix all ingredients except cucumbers and onions slowly in a large bowl until smooth. Take the thin sliced onions and cut "rings" into quarters. Slowly fold 'cukes and onions into sauce. Refrigerate at least 6-8 hours, preferably overnight. Enjoy!

Serves 2-3
