crumble up Ritz crackers in small fine crumbs.... add a good amount of lemon pepper,but not to much at the same time. in another bowl mix up some eggs.... put fillet in egg than in cracker batter... after that throw in a skilet with bacon grease or just Crisco..... brown each side of fillet and enjoy!!! best recipe out there.... this also is good on walleye, stripper, bass, and any pan fish....

I also add garlic powder to crackers.  really good way to cook the fish

I almost always bread and fry gill fillets,but today I also made some fish cakes.I took a good lb of fillets boil them in a little water,old bay,garlic powder,and lemon juice. Drained them and flaked them with a fork. Let them cool,added real mayo,one egg,black pepper, garlic powder,onion powder,home made cherry bomb hot sauce,more old bay,a little lemon juice. Add some panko bread crumbs till it binds together. I took a 1/4 cup measure and formed same size patties,dip patties in egg wash and roll in panko bread crumbs and pan fry till brown on both sides. Try to flip them one or twice till there brown. They where real good and spicy.

Season some flour with salt and pepper
Pat dry the filets and toss in the flour
Fry in a frying pan with some butter and oil until nice and brown.
Enjoy

Get yourself a bag of andy capp hot fries and crush them up into crumbs,dip fillets into egg then fries and fry,can't beat em!!  even better with a couple michelob loggers.
