I bake a few tonight that was great , I used webers zesty lemon seasoning , the wife and I both really liked it

They are good on the grill, put some olive oil on no stick foil, lay your fillets on and sprinkle with seafood seasoning of your choice cook until they flake apart. MMMMMM

Moist fillets in some cornmeal batter kicked up with a little cajun spice, and pan fried. Then a few fillets in a tortilla, some slaw, slice or two of tomato, cheese, some sriracha sauce....... bluegill tacos!
If you batter and fry em, keep the batter thin so you can taste the fish... they're way too tasty to covet up with batter!

PANKO......japenese bread crumbs ...dunk in flour then egg(beaten) then panko! then fryer

seasoning salt on the fillets, then into the flour, a dip in some egg wash, next step is panko bread crumbs, give them time to set up while the fryer gets to temp, once it does its straight in the oil. Dip in some homemade tater sauce and you'll be feeling great!

I've been using "Andy's Cajun fish breading" deep fried the only way to go. I like a little spice.

I coat them with bread crumbs and bake them till golden brown, you get the textured of fried fish without the mess of oil. you can season it with whatever seasonings you like
Also works with any white meat fish.

Simply lay out a 18" section of aluminum foil and put butter pats spread out in the middle, layer your bluegill fillets, sliced onions, sliced lemons and season with your favorite seasoning(cajun, lemon pepper or old bay...etc) and a few more butter pats then wrap foil into a pouch and bake at 450 deg for about 15-20 minutes.
Small slice in the top of foil and open up this simple Magic

AW,
How about a Fish Braciola
Start with a couple of fillets ( this is Swai), pound them out a bit.
I hit them with some cracked pepper and sea salt, a good layer of baby spinach and some chopped raw shrimp..
I topped that off with a sliced hard boiled egg, Goat cheese and chopped Cilantro.
Roll it up, tie it up and brown it a bit in a light oil. Another shot of cracked pepper and sea salt is good. Pop the pan in the oven at 400 to finish
When it gets to about 160 inside, remove it to a plate to rest. De-glaze the pan with white wine, add chopped garlic, butter, half and half and some cilantro. Simmer and reduce by 1/2.
Plate it up and enjoy!
I sure did
I did this with bluegill fillets a couple of weeks ago by layering them across each other. I precooked the shrimp slightly and it came out too good to take pictures. Darned thing just disappeared
