Maple Bacon Cheesecake
« on: Dec 22, 2011, 06:53 PM »
My place of business always closes out the last work day prior to the x-mas break with a "Sweets Pot luck" everyone brings in baked goods and we call get sugar highs and crash by noon.. well I decided to kick it up a notch this year and made a Maple Bacon cheesecake.

this is candied Bacon.. yes I said candied bacon!

I made a standard maple cheesecake and then addes some maple syrop to the top as well as a pile of candied bacon. I made it a square so I could cut it into bite size pieces instead of thick slices

I have had a few requests, so i hope no one minds but here is the link to my blog, I posted the reipe there as I was getting a lot of requested here and elsewhere

http://bassjunkiesfishingaddiction.blogspot.com/2011/12/december-recipe-maple-bacon-cheesecake.html

I will be honest the candied bacon is the hardest part of the recipe, on my first attempt I burnt an entire pound. To Candy bacon you have two choices, first, in the over at 325 or so, or in the fry pan.  I toss the bacon in brown sugar and make sure it is coated well. then lay it out flat in the pan.

In the over watch it constantly, as onces it starts to burn it will go fast. In the pan, you need to empty the pan on a regular basis as once the sugar starts to burn it will smoke and give the bacon a bitter taste.

Also for those who pat dry bacon on a paper towel, remember candied bacon is super sticky and will make a mess if you are not carful (not fun trying to pull paper towel off candied bacon)

Now that is one for the food network! Anything bacon is on or in is a winner, but that should've been a wedding cake in my book!

wowsers......25 dollars later and operation Maple Bacon Cheesecake is underway

cheesecake is in the over.............

I am drooling........it is time to make the bacon..........

Hope I don't screw it up !!!!

 :P

Welp.....everyone wanted cheesecake........so, we jumped on it........

everyone liked it........the wife bakes like a mad person and she liked it........my kids didn't want the bacon on it, but felt free to scrounge the candied bacon while putting it on the cheesecake

I used THICK bacon......didn't crumble so well, so I chunked it on !!!  food processor probably would have made quick work of the bacon.......

I made the crust too wet--a hair too much butter...........

All in all........well worth the effort..........and come tomorrow night, it will be more delicious

Thanks for a GREAT recipe............wife will take some to work tomorrow.........

welp, cheesecake didn't last long......everyone housed it........the chickie where my wife works thought it was great........seriously .........this thing was off the hook awesome
