How do you cook Perogies?
« on: Jan 12, 2011, 04:26 PM »
I am going to make my first batch of potato and cheese perogies. Just wondering how people like to cook them up.
I usually boil them but I want to try something new. Any suggestions?
Thanks,
Glen

skillet with butter or olive oil, seasoned with steak seasoning. you can also throw in broccolli or your favorite veggie.

Ok from a injected  Pole here THis is the true way to do Perogies. Bring water to a rolling boil drop in for a couple miniutes to set dough. Take out fry pan or griddle put in nothing but Butter, and chopped onions. Saute till they just start to lightly brown thats it simple but oh so good Serve with the cooked onions and sour cream.

I put them in salted boiling water just until they float (a few minutes). I then throw them in a skillet with lots of onions and green peppers and polish sausage sliced up, salt and pepper. Serve with a side of sour cream. Daisy sour cream is the absolute best in my opinion.

Yep, have to boil them til they float.  Then remove , let sit for a couple minutes and fry in butter.  Other option is to freeze them at this point for a later date.  If you do that, be sure to rub a little butter in the freezer bag and a small amount on each pierogi so they don't stick.

Potatoe/cheese filling is the traditional filling but my favorite is a suerkraut filling.

Have also deep fried them and that is good also.

Oh and one of these helps in the making process.   This telemercial is ancient but this device(there are 2 sizes) is still made and sold in Canada.  I ordered one for my mother via internet for Christmas...

Both my parents were born in Poland and I was raised on Polish food. We always make it this way except for one small difference.  We add finely chopped bacon to the onions.

What I do is start with one whole onion cut julienne.  Put in a skillet with some butter and saute down until they just start to get translucent.  Not too hot a temperature while cooking- be patient.  It pays off in the end.  Once onions are translucent, throw in the perogies and cook until they just start to brown up.  By that time, your onions will have started to caramelize nicely.  Right at the end, put in some minced fresh garlic and cook just a few minutes longer.  Or you can add a little garlic powder at the end.  We're talking heaven.  Again, use a whole onion and not a small one either.  They cook way down.  Finish with some sea salt and fresh cracked black pepper.  Mmmmmm-hmmmm....

I love to eat perogies with fish, too.

Fish on!

Woody,
I think you and I should start the "Fish And Game Cafe" someplace in the Finger Lakes.

I think you and I should start the "Fish And Game Cafe"

We just need a "backer".  Someone with money to burn who will pay us to get the fish while they are paying the people to run the restaurant.  I will write recipes and develop STANDARD OPERATING PROCEEDURES for the restaurant, but I don't care to work there.  I will manage it from the water!

You and I will get the fish and game, right?

Okay, anyone with money to burn who wants to open up a "Fish & Game Cafe" here in the Finger Lakes, just contact me or RG!    Thanks!
