For nonelectric the basic Rapala and give it a few swipes on their V type hand-held sharpener before each use to keep the edge on.

The 4 inch rubber handled Rapala is the best for perch with crock sticks to touch up the blade every now and then. I always scale my fish, you save a lot of meat that way and they taste better. Electric knives are for lazy college boys.
You can not take too many perch, unless you can not clean them, give them to your friends and neighbors to clean and cook. The more perch you take, the faster and bigger the rest  will grow. The walleyes and bass will survive from fry to fingerlings.

No college boy, but in the hands of a man,my Twister will out fillet any hand blade,you have to know how to use them and I do!There is no flesh left on the fish,you can read the morning paper through the skeleton,yea you loose all that wonderful belly meat that fry's up hard and nasty,I like my fish cooked moist all the same not half cooked right and the nasty belly meat hard and dry.

Well thanks for all the info   but one thing if you have read my posts in the past...... it wont be to cut up perch!    lol  was looking for a real knife for real fish   lol   salmon trout  cusk    bigger stuff

I use a cheapo wally world boning knife. Sharpen it with th D-handle also cheapie sharpener. I have an electric but have'nt tried it. I hate change, what can I say?  I can also read a paper through what's left!  ;D

Mainehazmt,you don't need a fillet knife for TROUT,just use that bake trout on a plank recipe I gave you guy's.lol You could have had all the trout you want here in Pa.,I caught over 60 yesterday,the state stocks them here all bow's in the 11 to 13 inch range,there fun to catch,but they  are really slimy and stinky,washed my hands three times,then took a shower and I still smell like a trout.lol Good fishin the Captain

Take a look at the Cutco Fillet knife.  The features are a blade that adjusts to  6", 7", 8".  Has a very sturdy sheeth.  Knife sharpener built into the sheeth along with skinning pliers also built into the sheeth.  Cutco will also sharpen your blade for zero dollars and send it back to you.  I have had many filet knives over the years.  This is the one. It's acutally called the "Fisherman's Solution" and you can view it on the Cutco website.

i like to call them stockies mashed potato fish.. they dont even have the texture of meat... disgusting... use em for crab bait

If you want a longer bladed knife for larger fish I can tell you what not to buy.
The Rapala fillet knife in larger blades are garbage, I bought one for my salt water trips and it was Garbage. I used it on two trips six years ago and it has been in storage ever since.

I use a Forshner. Made in Switzerland. This knife has deboned well over 20 deer. Filleted hundreds of fish and is still as sharp as new after 15+ years. When I bought it (at a local bucher shop) they told me if it ever gets dull to bring it back and they'll sharpen it. I wonder if they're still waiting for me?

I work on a fishing boat and I only use 3 knives, a cheap serrated knife for cutting bait and bone, a Dexter Russel 1378 for codfish, haddock, bluefish stripers, and a dexter russel 1376 NR for haddock and anything freshwater, perch, trout salmon.

The dr1378 has and amazing backbone on it and should be used on your larger fish and the dr376NR is a bit shorter blade and more flexibility but is a nice light blade that will hold a edge through many fish. Just be sure to keep these blades dry during storage as they are very high carbon and will rust. My knives this summer saw thousands of bluefish, striper and ground fish and are still going strong though this season ice fishing.

I work as a chef and knives are to say the least very important to me.  I use a brand of knife called "Lamson Sharp" American made and in the kitchen they rock, seen a lot of action and have to re edge every three years.  I have a set of wustoff but switched to Lamson Sharp and do not have a full set yet.  I don't know if they make a good fillet knife for panfish or smaller varietals of fish but this thread has made me want to go and research it.  For the time being I us the good old rapala wooden handle for slicing threw the pannies, suits me well.  Got an electric for Christmas a few years back and just cant get used to it maybee it is because I am so used to using knives.

cutco fisherman knife. this adjustable blade, LIFETIME blade guarantee, never has to be sharpened, and when it does send it in and they'll sharpen it or replace it. my dad deboned and butchered a WHOLE BULL MOOSE with my knife didnt sharpen it once.

I cleaned fish professionaly for many years I use a hand knife for salmon and large trout for pan fish I use a electric black and decker it is 12 years old have afillet king still in box Iget winters off so I fish all the time knife has had alot off use hope this is of some use

Any electric knife works well but if you get someone who knows how to run one the best tool is a beer. They fillet,and you open the beers. ;)
