You wanna go in November into early December for the best fishing.
And still expect super cold weather in the interior.
Ice can be sketchy around Anchorage early due to warmer temps.

Same deal here in the North West Territories, except we get great weather late in the season and the fishing can be pretty good. Just be ready to deal with drilling through 5' of ice.   ;D

Not sure how the late season bite is in AK.

Depending on when you come up eather cold and slow or relay nice. This time of year plan for cold and slow. Ice is  4 feet thick and the sun only shines for 4 hrs not much light for plants to make oxygen makes fish lethargic. If you come up in March or April days are longer and fishing is better since the day light makes fish more active. down side in the ice is a sloppy on top so plan to be wet.  If I where coming to Alaska to ice fish I would come in October November first Ice is better fishing if you ask me. You will catch bigger Rainbows and lakers here but you have to be in the know. If you just stop in and ask a person at a store where to go you will catch fish but you wont find any thing over 12 or 16 inches. Plan to put a lot of miles on a rental if you are looking for fish of any size you will have to drive 60 to 200 miles one way. I don't know if there is a place that rents augers in town and you wont want to hand auger through 4 feet of ice  more than one time.  There is a person in the Vally that guides people in the winter I think his web site is fish4salmon.com

Alaska has awesome ice fishing if you know what your doing.   If you love to fish, then come up during open water, many more fish to catch, better eating and much warmer temps.  I love to ice fish, but if I was to make a trip to Alaska it would be during King and Red season (late June).  It would cost a fortune to rent an auger, snow machine, and a place to stay.  Don't fool yourself, ice fishing here is nothing like back home, it is COLD and very expensive, and can be slow fishing like anywhere else.

Yes if you decide to do it let us know. I live on the Kenai Peninsula and would be glad to take you out.
I have plenty of extra gear and an extra snowmachine.
Depending on where you go and the yearly weather variations it could be -50* or 40* and raining on the ice.
Many lakes require a snowmachine for access but there are some you can drive right to in a car or truck.
The best fishing lakes IMHO require snowmachines for the best access.
Last year we had shoulder deep snow and this year it has rained on us a couple of times.
We still have ~20" or more of ice down here on most of the lakes.

Sound advice here...I would just add if you want to come to Alaska so you can harvest fish...the ocean has the best eats. make sure you plan something that includes salt water fishing.
