Got a freezer bag full of them from last season. Thoughts on if they're still good to pan fry?

The eggs are tricky, the rot faster.  If theres any freezer burn U might pass.  When they go bad they are real bad!

Thank you. Might try a quick beer batter bread coating and deep fryer instead and see how that tastes.

If they are freezer burnt they will not be of good quality ,  give them a shot you might be able to pick through them to get some good ones

How do you make fish sticks out of them? I beer battered them into patties and they were delicious.  Can I use a sausage stuff for the roe and make like an summer roe egg sausage breakfast stick?

perch roe is ok, and I've eaten them many times, but I don't believe I would go through the trouble of trying to stuff them into casings. Besides you would need a couple gallons just to make it worth the effort.  Then you've got an awful cleanup job in your kitchen.   NOPE  not me

Whatever - some of us can't afford to do that all the time.
On to serious responses please.

They can be a little gritty, but done right they taste good. My deer blood pudding is to die for. I don't even tell anyone what it is and they love it.
