I've heard of somebody upstairs turning water into wine, but changing perch into brown trout will get you a spot at IF&W if you want it, Joe.
Never tried the eggs but do you think they would be good in a Newburg sauce? My wife likes that little bit of sherry flavor. What's the texture like when cooked - like eggs in a lobster?
Joe, Those perch eggs are tasty! You got into some jumbos that you got some nice fillets from. I use to fish Champlain and enjoy eating them as well. My parents use to sell there perch by the pound to a place in Alburg springs VT.
