First chance I’ve had to post the process! These are the fish I caught a coupe days ago. Those eggs are really good! Need to find a more ways to cook them. Then, one  favorite  method, poor mans shrimp!  Fried is good! sautéed with butter and light spicing works! So does baked with crab stuffing and garlic white suace! Gett8ng hungry! You can know if I post fish on here that are not on the way to release, this is their final destination..... Well, besides my septic system. hehe

I’ve been eating them since I was a kid in Upstate NY. We used to sell them too. Right now 7” and up go for $2# whole. Fillets go for $15 and up. A meal in a restaurant will run over $18.95. I’m gonna try them in this spot in August and September, before they really get developed with eggs and milt.

I've heard of somebody upstairs turning water into wine, but changing perch into brown trout will get you a spot at IF&W if you want it, Joe.


You can know if I post fish on here that are not on the way to release, this is their final destination..... Well, besides my septic system. hehe]

Newburg... Interesting! In the skein, they have similar attributes to polenta or steamed cornmeal,  like grits. Not like lobster eggs at all. Kinda mild sweet. Not fishy at all. A few times now I’ve cut the skein in scallop like peices. That worked well! A couple people have said they remove the eggs from the skein, mixed with a light batter and made fritter/pancake kinda things. You mentioning Newburg sauce makes me think a little about Hollandaise sauce as well. I really like them and don’t like wasting them, so I’m looking at different ways to use them. My dogs love them too. I don’t give hem the fillets, though.  ;D. One person mentioned just mixing them in plain omelets. Maybe with some cheese sounds maybe,,, Just to reiterate, the eggs are soft like steamed cornmeal or grits, sweet, very mild/not fishy and a large % of female perch this time of year.

Joe, Those perch eggs are tasty! You got into some jumbos that you got some nice fillets from. I use to fish Champlain and enjoy eating them as well. My parents use to sell there perch by the pound to a place in Alburg springs VT.

THANKS!  trying a few new recipes with the eggs over the next couple days. Kind alike a “test kitchen” thing. Right now, yellow perch, 7” and up,  in Upstate NY are going for at least $2/# and fillets go for upwards for $15. Guys on Ontario bays are catching 100 - 200# + daily at that price. Maybe i”ll head out there next winter to make a few bucks! $400 days sound decent for going fishing!  ;D :thumbsup: :icefish:

Never eaten the eggs but a friend of mine said his father breaded and fried them up..
Nice job filleting, lost art. Went to electric when I started cleaning dozens at a time.

PERCH EGG FRITTER! FREAKING GOOD!


2 cups eggs removed from skeins
3T each fine chopped red pepper and onion
2T fine corn flour (NOT MEAL) or regular flour.
One egg beaten and combined with the veggies. S&P to taste
mix all together
Then sauté a heaping Tbls., flattened to about 3/8”, in buttered medium temp skillet til golden brown on each side.
