I always attempted to NOT puncture the sac before frying up,interesting to see the posts about opening up to fry !
Definitely an acquired taste.A quick rinse under cold water then let them dry while melting a good size chunk of salted butter in a frying pan. Place them in the pan and walk away until you can hear the sizzle. Turn them over and give them a few more minutes, you may need to add more butter. Remove from pan. A bit of lemon juice is ok. I prefer sriracha or tobacco sauce.
