In response to the thread about the ethical size on perch: first, I try to make sure to not fish where I'll get lots of little ones unless I want them for bait (a couple of years ago I caught a walleye at Hog Island on a perch and found it already had one in its gullet). That said, if I catch them with the big ones then I make sure to eat them and here's a couple of pictures showing how to make them really special.
The top picture is from the grill. I soak the perch in beat juice; it gives a nice deep sweet taste and, of course, the color is interesting, too. The second picture is our "poor man's shrimp"; just steamed enough to get them off the bone, then chilled and served like shrimp cocktail.
Also, I don't have a picture but when I catch some little ones and happen to get a big fish, too, I use them for stuffing. Just steam 'em, get them off the bone, crumble them up with finely chopped mushroom and a boxed wild rice and stuff a big trout for baking. Fishing for them is only half the fun!
