fish fry batter on the whites out on the ice. I make beer batter when I get home and have a real kitchen for the rest of those fillets. poached the Brown in white wine, lemon and garlic and served it with cream cheese on crackers. the smallmouth are plentiful and wormy usually. Once we found them and had those few we were tossing them back left and right, we throw most bass back for the summer anglers to enjoy. Those three and the "slime darts" will go to lobster bait for the summer. one of my fishing buddies has his residential license so the turnaround into free lobster is worth the trade off.I have tried smallies before and have made pickerel chowder but wasn't overly impressed with either fish.
On a guided trip in Maine I tried smallmouth. It was fried with some Cajun spices on it. I thought it was excellent.
I used to pick up some pretty good smallmouth out of the Scituate Res growing up, they get nice and healthy sized in there.
