Ok, I was diggin' around in my recipe box er, BIN for something easy for dinner, getting tired of cooking. (sorta) Found this from years ago...another Reb original. It's really easy.
Lime chicken with salsa
3 whole boneless, skinless chicken breasts
3/4 tsp cracked black pepper
3/4 tsp chili powder
3/4 tsp smoked chipotle powder
1 Tbsp chopped chives (preferably fresh)
Two limes, juice squeezed out, saved and cut into wedges
One jar of chunky-style salsa
Cup of shredded sharp cheddar cheese
1/3 cup of any vegetable oil
Rub chicken well with the lime juice, (Or marinate in baggie with lime juice for an hour or so) reserving the rest. Sprinkle breasts (Chicken!) with the black pepper, chili powder, and chipotle powder. Heat oil in a 12" saute pan over med heat. Add chicken, cook about 3-4 minutes,then cover and reduce heat to low. Cook about 5 minutes or until chicken is no longer pink. Lighty drizzle rest of lime juice over breasts (chicken!), then spoon about 1- 2 lg Tbsp of salsa on top of each chicken breast. Sprinkle with chives, then generously with shredded cheddar, cover and cook for 5 more minutes or until cheddar is melted. Remove cover and let chicken rest in pan for 1-2 minutes before serving with lime wedges. Enjoy!!
