lansky knife sharpening system
« on: Feb 09, 2005, 07:55 AM »
HI

I just bought the lansky standard knife sharpening system and I have one question about it. When you sharpen the blade do you start at the back of the blade to the tip or vice versa. I hope it was worth the money, I was tired of filleting with a dull knife.

Thanks

What angle do you use for a filleting knife?

Clamp your knife in the sharpener and line the stone up with the angle thats on the knife now then go to the closes angle on the sharpener . Should tell you on the instructions . But if you are like me you don't read them any ways.    Good luck !     SHINER 8)

I have the GATCO version of the same system. They work awesome. Just keep in mind the finer the edge the sooner you will need to resharpen. You will want to experiment due to edge holding capabilities of different qualities of steel. Even from one brand to the next (if they claim to have the same type/quality of steel) there will be differences in how long a blade will hold an edge.
Regardless with the Lansky, Smith, or GATCO, they make such a perfect edge you will be impressed how much longer your tool will stay sharp.
