            I like dipping my filleted perch in egg the a combo of Italian bread crumbs & crushed Lays kettle cooked potato chips then fry.mmmmmmmmmGOOD

Cook in the fridge overnight with lemonjuice, then cocktail sauce.... poor mans shrimp.

Since my wife has Celiac disease, I had to come up with a Gluten Free recipe so anyone else out there, that has the same problem, here it is:

1 1/2 cups Bob's red mill Gluten free all purpose baking flour (Wegmans)
1 tablespoon baking powder
1 teaspoon or less Kosher salt
1 cup Bob's red mill rice flour
Club soda

Mix the first three ingredients and add the club soda to make a "beer batter"
Pat the filets dry and dust them with the rice flour (rice flour makes them crunchy)
Fry up!

You can add any additional seasoning that you would like - as long as it is gluten free
*This actually tastes better and is crispier than traditional beer batters and you don't have to have Celiac to enjoy it.
I too am a WheatTard. I have always used Zatarains Seasoned Fish-Fri.

this is the method i use to cleam them.


i usually cook them in a cast iron frying pan with a little bit of oil. serve with a lemon wedge on a bed of herb rice and a couple small taters.

I use a cleaning board and filet using an electric filet knife.. rinse clean pat dry and in to a steel salad bowl.. pour a little milk just to moisten filets to get seasoned mixed bread crumbs to hold.. if  I have a lot of filets.. i use one egg and milk  for battering.. so the stick is better during quick pan frying.. the egg keeps the bread crumbs on the filets so the egg makes sense when you want to use the same pan oil and keep it clean for the next batch to fry .. Like any vegetable/corn/peanut or canola  high heat oil  is fine.. i even use olive oil for these small filets.. about a 1/2 cup oil for a twelve in. skillet ( about 1/4 in deep oil )  takes about 8 minutes to heat to over 350 degree on my stove set on medium.. place filets ;eaving room to flip them ..(about six  filets per fry.) two minutes on each side or until light golden brown) note! flip only once just like hamburgers or  steak..  remove to drain on paper towel in a plate.. repeat till you finished frying.. for a good tarter dip.. helmans mayo usually five heaping tablespoons for a dozen perch will do.. add two tlbsp sweet relish..pepper and tea spoon lemon.. for clean up.. i dump the used oil in a metal empty coffee and later you can pour it out in the back soil. I would  never risk eating raw fish.. like cold cooking with the acid of lemon citrus over night in the frig for fear of pathogens.. enjoy and be safe.. take it easy on the fish! ;D

I do the same but I steam them, my wife has a steamer in one of her sauce pans that I use, against her better judgement, they cook in minutes and have way better flavor i.m.o.
remember the 7 p's, proper prior planning prevents piss poor performance

I learned a nice breading recipe for perch from a friend out of Rochester.

1 cup Jiffy Corn Muffin Mix
1 Cup Wegmans Italian Bread Crumbs
1 Cup Flour

Mix all 3 together

Put perch filets in egg wash then breading mixture then deep fry in peanut oil.

I like to take my fresh fillets and marinate them in Italian dressing for about 2hrs then heat up some olive oil with minced garlic  and when sizzling add the perch fillets about 3min per side they will turn real white and thats it. Have been doing it this way for the last 3 years and the family loves it

With perch, quite often I simply coat the fillets in Italian bread crumbs and pan-fry with some butter until the outside is just a little crispy.  I have done other types of fish rolled in just flour with some salt/pepper in it and pan-fried in butter and that usually turns out great, too, as long as enough butter is used!

For those who like to make poor mans shrimp try using a palm full of pickeling spice in a tea ball or a piece of cheese cloth. It adds great flavor.

Coconut perch!

I tried beer battered perch with coconut once and it came out great.  Just roll the filets in flour, cover in beer batter (beer and flour) and then roll the battered perch in shredded coconut (i like the sweetened flakes) and fry in oil just like normal.  The coconut compliments the sweet white meat of the perch well.  If you like coconut shrimp, you will like coconut perch!  Give it a try

I fillet my perch, bluegills, crappie etc. I rinse the fillets under cold water and then pat them dry before freezing.

Here is how my wife and I make them. Similar to some of the other recipes listed.

Beat one egg with 1/4 cup milk in a bowl. Coat each piece of fish in the egg mixture.  Roll each coated fish piece in unseasoned bread crumbs in another bowl.  Sprinkle Old Bay seasoning on the coated fish. Then fry the fish in olive oil in a medium size pan until golden brown.

Great with a vegtable and or coleslaw.

I like cocktail sauce on the side for dipping, but that is just me.
