Since I fish some tournaments I'm obligated to say they taste like chubs. But as someone who's constantly hungry for fish, they taste pretty dang good if there cooked right.

If were talking about favorites then its flounder friend in butter and seasoned with old bay seasoning after it was swimming about 2 hours ago. By far the best tasting fish I have ever had. But my all time favorite is probally brookies.

In desperate times I have cooked bass before and I thought it tasted pretty good. that was with no seasoning or anything, just cooked over an open fire. that being said im sure any fish would have tasted awesome!
