Sausages anyone

The last time i made sausage back in May or June, i made 24 lbs and we just finished the last one.  So i made more sausage friday night.  Luckily i had my bro inlaw around to help with this batch.  We punched out 20 lbs in 3 hours, i have it down to a science these days.  I usually use about 2/3 pork butt to 1/3 lean deer, but this time i decided to make them meatier and went 1/2 and 1/2 i wasn't dissappointed.  I made italian sausage, red wine, cheesers, and beer brats, i have about 5 lbs of each.

I do that myself every year. Italian sausage, 50-50 pork and venny. Wife wants breakfast sausage this year. Got to find the venny first.

Are the pepperoni kits any good??

I really like the little pepperoni stick like the slim jim style, hi mountain makes a great kit.  i've never tried making a full size pepperoni though.

Cabelas makes a snack stick kit that I have been having good luck with. I slow smoke mine for about 6 hours at 200 degrees with maple wood.

ahh   sausage time of year..   Think I still have enough potato sausage to last this winter.. but Im liking the sounds of the venison brats..  I WOULD say I would bring the beer for an invite but even I'm not THAT crazy!!!
