Go to my site. I have a article on how to fillet them. If you can fillet a normal fish, you can do a pike with these directions. If you have any questions after you read it, let me know and I'll help you out.

To get to my site, click on the little house under "Got Pike" on the left of this post.

Kesascove,   Here is another site that you may be able to get some information from.  It's a different style of filleting, but it works good.  It's on page 5.  Good luck!http://www.sf.adfg.state.ak.us/region2/html/pdfpubs/pike.pdf

Ooops...you asked about cooking them too. Pike is a mild, firm white fleshed fish. So you can cook it any way you want. I like it dusted with flour, dipped in egg, rolled in italian bread crumbs and deep fried.

enjoy.

I went to Esox's website and that is exactly how I filet pike as well.  It does take some practice and pretty good knife control.  Feel your way thru it...you should be able to feel the tick...tick...tick of the knife over the bones.

As far as cooking, my favorite recipe is just as Esox does except instead of Italian bread crumbs (which is delicous also) I use ground up Bran cerial as a final coating.....sweet and mouth watering.

I FISHED THE TWIN COVES 2-2-03 ON , THE CHARLES RIVER. I HEARD OF SOME NICE PIKE CAUGHT IN THIS COVE. I STUCK OUT THE SNOW AND RAIN TO HAVE A CHANCE AT ONE OF THESE MONSTERS. NO LUCK. I WAS USING LARGE SHINERS, I GOT AT THE BAIT BUCKET IN WALTHAM. I DID GET A NICE 4LB BASS AND ABOUT A 2LB PICKEREL. THE COVE SEEMS TO BE PRETTY SHALLOW WITH WEEDS TO THE ICE IN SOME PLACES. I'M NEW TO THE HUNT FOR PIKE,AND WANTED TO KNOW IF ANYONE COULD GIVE ME ANY TIPS. ANYTHING WOULD BE GRETALY APPERCIATED.
