Tasty meals

Nothing like the taste of fresh fish in the frying pan.  The fresher the better.  We mostly catch pike, walleye and perch around my parts.  With something like that you can always hit it with salt and pepper and fry it in butter.  Simple and easy.  There are however a few more colorful ways I expect some of you have tried.  I've even baked them with white wine and garlic.  I mean how can ya go wrong with that. ;D

Thats a good point a lil parmesan cheese is good with some walleyes..and grilled to perfectin..mmmm

I have been baking some fish in butter, garlic, and a little dill lately.  Deeeeeelicious.

 If you wanna try baking them, put them in a pan and cover them with melted butter mixed with lemon juice and pepper and a little bit of ginger, the way i fry them sometimes is before coating them with flour soak them in beer for a few minutes then coat them be, makes them extra crispy and you get the beer taste along with it
Theres only 3 seasons..open water, hunting and icefishing!

  Sounds good...does it work with lake trout?  It's already pretty oily, but that sounds like it tastes good.
I love fresh fish, but lunch today was some of Sweetie's great smoked trout with cream cheese on rye.  Taste treat!!

Baking disk coated with butter
Northern Pike fillets lightly seasoned with Old Bay. (just garlic powder and pepper works too)
Smother fillets with sliced onions
Pour on some melted butter
Another layer of Pike
Another layer of onion
More butter
Cover and bake
                        Wow!!!!

The last time I baked up some fish I put chopped Kalamata olives on the fish, then sliced tomatoes, then the sliced onion.
                   That was some very happy Walleye.

Temp would be 325. How long depends on how big of a dish. I cook it until the meat of the thickest part flakes. If it flakes, it's done. I usually use a 9x13x2 baking dish and I think it takes about 40 min.
 I might be cooking some up this weekend. Will let you know the specifics if I do.
