O.k...here goes...
First get a small pot of water boiling...
then take the rinsed perch fillets and place them on a cutting board...
with a sharp knife,cut them into strips,about 3/4" thick by 2-3"`s long....
have a bowl of crushed ice ready on the counter leaving room for the shrimp...
drop the perch strips in maybe 5 or 6 at a time into the boiling water..they cook really fast ,so, when firm strain out and place directly onto the bed of crushed ice , the key is the quick chill they get that really makes them resemble shrimp....
then arm yourself and your guest with small forks and dip them into your favorite shrimp sauce....
my favorite dips are melted butter,lightly salted and/or homemade cocktail sauce , made from horseradish and catchup...
and,finally, and maybe the most important single ingredient, they must be devoured along with your favorite frosty ale or two!!!
And there you have it...Poor Man`s Shrimp Cocktail!!!!
