Paul's Fish Chowder

2 lbs fish fillets cut into 1'' chunks (I use pike, walleye, burbot, whitefish, but that's because it's what I catch here).
4 cups diced potatoes
1 cup diced onions
1 cup diced celery
1 cup diced carrots
1/2 cup diced green pepper
1/2 cup diced yellow or red pepper
1 tbs dried parsley
1 tsp dried oregano
1 tbs dried chives
1 can evaporated milk
1 can mushroom soup
2 tbs butter or margarine
chicken broth or water (approx 4 cups)
salt & pepper (to taste)

Put fish, potatoes,onions, celery, carrots, peppers, parsley, oregano, chives in pot, &  add chicken broth or water to cover. Boil until carrots tender (approx. 15 min.)
Lower heat to simmer and add milk, soup, butter, salt & pepper. Heat, stirring frequently until well-blended. Great served with baking powder biscuits hot from the oven.

Sound like a plan,the only thing I add is a couple of cups of sweet corn,I've just have to have corn in my Chowder.

I don't make much for fish chowder but you don't find that fish gets way overcooked when put in at the beginning. Just wondering
If people concentrated on the really important things in life, there would be a shortage of fishing poles.

I add my fish last only take 10-12 minutes to cook the fish.

Cooked this tonight, made a couple changes/additions it was excellent!!! Added the corn like suggested above also added about a half pound of bacon and used the bacon grease instead of butter and added some bay seasoning. The family really enjoyed it. Makes enough for another entire meal and then some. Can see that making its way to the ice with me for a good lunch. Thanks for the recipe.

Thanks for additions of corn and bacon, captain54 and steelerod! I've added them to my recipe. As for time cooking fish, the thickness of the carrots seems to govern my cooking time. I do add the fish last, after the veggies are boiling, but I'm a pretty relaxed cook and not a meticulous timer. Everyone should adjust to their own taste. ... Paul

Looks good, gonna try it tonight. I will try it with the bacon, and I also plan on adding a can of baby clams...mmmm.

hey steelrod, how much old bay seasoning did you use? i wouldn't want to use too much of it.....

Great recipe Nightbird!  I used it tonight with some pike and blue gills I had in the freezer.  Very good and will definately use the recipe again.  The only changes I will do next time is fry the bacon first (I don't know what I was thinking!) and make a roux to thicken it up a bit.  The only changes I made were adding whole milk and I doubled the butter.  Adding the fish the last fifteen minutes kept the flesh together.  My wife, 19 month old, and folks really enjoyed it! Thanks for the recipe!!!!
