I agree with you and would like to see a continuance of this video, where the bones were removed.
What I like about this video is he's doing a preliminary cleaning right on the ice. With a
paring knife.

Semi cleaned fish go in the compact cooler. Skin, gills, head, etc, are already destined to the recycling / waste disposal area / garbage bag / fertilizer.
Getting the spine and ribcage out after that is easily done at home, after you've done it a few times. 8)
But my usual MO is I never cut the head off and end up with 2 fillets, no bones... I have to go out of my way to see what they've been feeding on and I usually take the lot home before doing so, so I end up annoying my roadside pickup 'friends' with a bunch of fish 'shells'...

But to be considerate, I only clean them no more than 2 days before pickup day or freeze the entrails. Keeps the neighbors from turning
