Who doesn't love a pile o' mac salad? Goes good with everything...this says Summer to me.
Reb's mac ham and pea salad
1 1/2- 2 cups of Miracle whip, and ˝ cup sour cream
1 1/2 cups cooked elbow macaroni, WELL drained and chilled
1 cup frozen green peas, thawed and drained (don't cook!)
3/4 cup cubed smoked ham
1/3 cup sharp cheddar cheese, cubed small (just chunk up 3-4 thick cheese slices)
1/4 cup celery, diced
2 Tbsp diced onions
dash of salt
Paprika, to sprinkle on top for garnish
Mix all until the salad is the consistency you like. Remember mac will absorb some of the Miracle Whip; so always add a bit more than you think you need.
Tip: DO NOT use the "lite" miracle whip; it will separate and become "watery" in a day.
Mix rest of all ingredients together well, cover and let sit in 'fridge overnite.
Enjoy in large piles.
