Italian Style Lakers on the Grill:
4 Fresh fillets
1 box of Linguini
1 can of whole tomatoes ( 16 ounces)
1/4 cup of butter
1 Tbsp of snipped basil
2 Tsp of lemon juice
1/2 cup of chopped cucumber
1 Tbsp of chives
1 1/2 Tsp of fresh snipped Dill
1 Tbsp Original CampMix
Lightly grease the cooking grill. Sprinkle both sides of the fillets with CampMix. Grill fillets for 10-12 minutes or until fish flakes with a fork, turning once halfway through grilling time.
While fillets are grilling, prepare cucumber dill sauce. In small sauce pan melt the butter, stir in chopped cucumber, chives and dill. Prepare pasta , drain and add can of whole tomatoes. Warm tomatoes with pasta slightly.
When fish is cooked, arrange on a platter and drizzle the cucumber-dill sauce over fish. Serve with pasta on the side.
