Perch Superbowl Dip

Gonna try this recipe today for the game...

1 cup Steamed or boiled perch flaked or diced up

1 cup fresh grated Parmesan cheese

1 cup Hellman's real mayonaise

8 oz. can of artichoke hearts diced

4 oz. sour cream

sprinkle of dill

Mix ingredients. Bake in shallow dish at 400 deg. until cheese bubbles. serve hot.  Spread on toasted thin slices of French bread.  Can use crackers as a substiute for toast. 

Original recipe calls for crabmeat instead of perch.  To try something new with perch I thought I would substitute.

i ended up not doing it. didn't have the ingredients except the perch. ;D

It's pretty darn good!

I added a few seasoned bread crumbs to the mix to thicken it just a little to create more of a spread rather than a dip.  Personal preference.

I'm a Chef for a career and think that is a great recipe. As a matter of fact...I have some fresh crappie filets in the fridge...I think I know what we will be having tonight ;D

Added a few green onions and it was really good. Definately will be made again.
