Caribou is the on the menu for the ice this year

   :) After 8 hrs of butchering my brother and I carved up two fine caribou for a whole freezer full of yummy ice treats. Kinda an odd cross between doing a moose and a deer, but awful tasty fried in butter! Now we just need some ice.

and in Maine (until we fooled people from Mass into thinking that it was a delicacy) we fed lobsters to our prisoners

that's right...it was a poor man's food.....they used to be found on the beaches and shores for anyone to have....

Just curious, how do'es caribou taste in comparison to deer, elk, or moose? I have never tasted it and was curious.

used to get all kinds of caribou while I was in alaska  the sports would get tag out  and when they got back to king salmon they found out what the overweight baggage charge was for caribou  alot of them only took the racks and front quarters   we always had full freezers of meat!

We made about 90lbs of caribou sausage last night, plus another 40lbs of deer sausage. As we were grinding away, we made caribou steak in several varieties and I have to say most preferred it to moose, deer, and even cow. Almost taste like a veal, super tender and oh so yummy.

Cabelas deli has a caribou (or elk, can't remember which) but it was freaking amazing.  I liked it better than deer, and I love deer meat. ;D

In all honesty, and meaning no offense to your duck / bacon recipe ( which sounds delicious) you can wrap anything in bacon and it will taste fabulous

I would have to say that caribou is one of my favorite wild meats. What I have had has been very tender and a great flavor.
