Shore lunch over an open fire.
« on: Dec 10, 2007, 02:19 PM »
I was wondering if anyone has some recipes that are simple yet delicious and filing that could be made over a fire.  The fire would be in a fire bowl with a grate over the top.  I was wondering if the fire would be hot enough as to where I could get oil hot enough to pan fry some potatoes and fillets like you would on the stove.  Otherwise I have heard a lot about wrapping fillets in tin foil and grilling them like that and would be very interested if anyone has some simple recipes of for that style.  Thanks in advance and good luck to you all.

You might be able to fry on a fire.  Use a cast iron skillet it holds temp well and disperses heat evenly.  I recommend buying a candy thermometer that will tell you the temp of your grease.  350 frys golden brown.  O yea also you will have to feed the fire to maintain desired heat.

Is it legal to have a fire bowl right on the ice or would I have to have it on shore?

I am not sure if it is legal in your area.  In MI I do not beleive there is such a rule restricting the use of a fire bowl.  I have see soome old fassion heaters that use wood out on lakes.

Don't forget the stick match rule. The grease has to be hot enuf to light a stick match when thrown into the pan. If the match lights, the grease is just right.

take tinfoil and put 3 layers then stick your filets on there ( pike, walley, perch) whatever you are catching then have a jar of memories of thailand sause or schezuan or whatever your favorite flavore is then just put a genrous amount on the fish then put 3 more layers of tin foil on top then fold all the edges in real tight so they will not leak then just stick on the fire or grill turn it once in a while and when it puffs up give it a few minutes longer then take it off the heat cut open the top and bon apitite, its excellent and a nice change from batter and grease.

Recipe #1
Fillet large fish like trout or salmon leaving skin on.
Make slashes 1" apart (from top to bottom) down the length of fish.
put skin side down on grill
Pour on some liquid smoke, hickory smoked salt, mesquite smoked salt, tex mex seasoning, spicy mesquite seasoning.
Cover with tin foil (hold down corners with rocks)
Cook until flakey and separate from skin with spatula.
Serve with potatoes and beans.

Recipe #2
Fillet fish
Using several layers of buttered tin foil add a fillet.
Squeeze lemon over fish.
Next take some processed sliced cheese and lay it on the fillet (overlapping 75%)
Add another fillet on top, squeeze on more lemon and seal in tin foil.
Toss on grill
Cook until flakey (turning atleast once) The pouch will puff up and steam will escape when just about done.

Potatoes
Using more tin foil and some sliced (psr boiled) red potatoes butter foil add taters, processed cheese (as with the fish.
Seal up tinfoil and toss on the grill (turning a couple of times.)
Serve with beans

These are two of my favorites!!!

Who in their right minds will throw a hot match into Hot oil hoping to ignite it?

We just use a coleman two burner camp stove and run the 1 lb tank, fry the fish in cast iron rectangle pan that covers both burners.

Here's a pic from Shorelunch in Canada.

I caught an interesting cooking show that taught a different method for open fire fish grilling. He took a long 3-4ft plank and tied the fish with butchers twin to the plank and then placed it upside down above the fire resting it on some logs so it hung a foot or so above the flame but still in the hot zone and smoke. He did this whith fillets, but said you could also use whole fish
