Mooter, us little old ladies have a lot of tricks up their sleeves....as well, this will keep in the
frig up to two weeks...sort of "pickles" the fish...we make double batches just for snacking on!!
And now we have our limit of lakers, we are headed out for the perch!!

How do you make yellow perch from Maine taste good? Or better yet, get us to try one?   ::)

A better question is how do you get a trout to taste good??? lol
IMO I'll eat perch all day feed them trout to the neighborhood cats!!!

Try soak soaking them in Ginger-Ale for a couple of hour before breading or cooking.
It works great.

Your perch taste fishy?  Might consider changing lakes :)  I agree wholeheartedly with a nicely seasoned beer batter in the deep fry!
Why spoil a great fish with any kind of batter,all you taste is the batter.  Save the batter for Rock Bass.

Use whole perch fillets or cut jumbo's into pinkie finger sized pieces. Combine one gallon water w/ 1 cup salt, 1 cup sugar, and juice of 1 lemon.  Bring water to a rolling boil, throw in a good handful of the perch pieces, when water returns to a boil, boil for 3 minutes. Take out of water and drain, squeeze lemon juice on fillets and dip in melted garlic butter.  MMMMMMMMMMMMMMMMMMMMMM MM GOOD, and easy.  I cut the recipe in half and use my deep fryer to boil the water and used the basket to remove from water and drain.  This recipe works w/ any fish and is really good w/ pike.

2 cups brown sugar
1 cups rock salt or pickling salt
couple tablespoons of garlic powder
couple tablespoons of onion powder
big can of apple juice
cayene pepper - optional

lots of perch...brine for about 12-18 hours
put in smoker with apple and maple chips
smoke until done
when done it looks like perch jerky..sweet and spicy

Hey teacup, that sounds good

IMO, Here is a simple, standby recipie you cant go wrong with....

1 cup of flour
1 tsp of salt
1 tsp of paparika
1 can of beer mixed to consistancy (I use 1/2 to 3/4 can)

Mix well, dip fillets, deepfry for about 3 min.

This is basic and add whatever sounds good IE oragano, garlic powder, onion powder...whatever but this recipie is how Ive done Perch, Walleye, Smelt, and Gills for 25+ years now. Ive never had any complaints!

And yes, cocktail sauce is good with them

use half the salt unless you like it a little bit salty

mmm heres a good one- :o dip the fillets in egg, then in flour seasoned with garlic salt & pepper, then fry them up with some butter- make sure the pan is wicked hot so that the butter doesnt saturate into the fillets making them soggy. ;)
after their done- cut a couple slices of velveeta cheese and two pieces of bread and make a sandwich with the fillets... learned that recipe in canada on a fishing trip during shore lunches... and boy is it good ::)

i take my fillets and soke them in buttermilk/egg mixture for 1/2 - 1 hour. then i mix up some italian bread crumbs with some cayenne, garlic powder, little salt and pepper and pan fry them. i dip them in horseradish sauce. even my 17 mos old son will eat them done without the sauce of course. enjoy

defiantly got to go with the beer- battered in the fryer... i want to try smoking some if any body has any recipe's i be greatly interested thanks

first you have to cut them in tiny little strips and then lay them out in the sun untill fairly dry then get some rolling paper the light blue zig zag is the best  ;D  ;D  ;D  ;D  ;D

getting hungry just reading these!

i like to put different dips in plastic baggies and make a few of each:

one will have flour and garlic pepper seasoning salt

another with flour and cajun spice

bread crumbs with Italian seasoning and parmesan cheese

pancake batter (already has the egg in it) with chicken seasoning (yup)

and one with just plain flour, pepper, salt

sometimes I experiment based on what spices look like a try...

sometimes soak in milk or coat with a litle egg but not always

That perch chowder sounds awesome
Ice fishing .... it's the only time I enjoy the cold!!!
