The fact that Wisconsin lets that go unanswered is deeply disappointing. Where is a cheesehead when you need him?  Shows they spend far too much time watching football.   >:( >:(

Smells like a homeless guy farted after eating Limburger for 3 days.

Love the mild stuff out of Theresa but my Dad used to get the aged.  Smelled it a lot growing up but descriptive words escape me.

Nice Baetis, Widmer's in Theresa makes great brick. Local cheese makers used to be all over the place and brick was the staple variety. One of the best used to be made in Monterey and was called Bon Bree. There are descriptive words for the aged version but none are very nice  ;)2

You're not suppose to care what it smells like, handle it with a knife and a cracker, exhale as you place it in your mouth, and enjoy. It's one of lifes great pleasures like pickled pigs feet, pickled eggs, pickled herring or raw ground round.
You've got a better chance of getting a good brandy old fashioned in Illinois than you do of getting an answer from out of state folks.  :)

I miss ground round on a cracker for sure.  Muddled litterally 1000's of Old Fashion's back in the day in the Fox River Valley. 

Any of you guys remember the old guys breaking out the Sulz?  OMG... I drew the line at that.

Nothin' wrong with a little head...cheese  ;D It's OK. Now pickled herring, that's a real deal too. Ma Baensch gets all the marketing 'cause it's Milwaukee but I like Rogge's best. Got a tub in the fridge right now. And pickled eggs, make my own. EZPZ.  Used to do a lot of ground round too but now only if I can grind my own. I haven't trusted "public" vendors to eat raw for 30 years or so.

Let's not forget a slab of Nueske's braunschweiger on rye with a nice slice of red onion..

As far as being over what it smells like, it really doesn't bother me because I know the great flavor that awaits. Kinda like stickin' yer nose in a jar of well aged Sonny's Super Sticky on a 98 degree day  ;D  Mmmm!

Now, so's you outa staters can get the drift of being in the room with a freshly opened package of aged brick... Remember that 98 degree day sniffin' cat bait? Let's say say you start the day squeaky clean but you're working hard, real hard. All day. Long about 3 o'clock or so things start gettin' a little slippery in the trunk. Really uncomfortably slippery. You take a short break to "degrease the pumpkin" so you can finish the work more comfortably. A quick wipe and, well, there it is. The aroma of brick cheese. Gross, disgusting yet wonderful all at the same time. Or maybe it's still the little boy in me that like to see folks recoil when I swallow a live minnow. 'Cept this tastes so much better!

Yes, it is an acquired taste...

I'm getting the nuanced bouquet of Premo Hog Wild Wicked Sticky Catfish Dip Bait. Notes of oak and tobacco, apricots, and rancid minnows yet with clean, refreshing finish. Would pair nicely with a '92 Sauvignon Blanc.
We're born, we live for a while, and then we die.  Sounds like a good reason to go ice fishing.

It smells like an earthy, deep Limburger with a hint of piquant old socks. Delicious on crusty rye bread with some old  fashioned braunschweiger and red onion slices. "Hey honey, come here and deep tongue kiss me".... ;D
