FRIED CHICKEN SALAD SLIDERS

On the rare occasions when we have some leftover fried chicken, I like to make Fried Chicken Salad Sliders.

What you will need:

3-4 cups of pull and chopped leftover fried chicken, make sure to include the breading and skin.
5 strips of crispy bacon
3/4 cup mayonnaise or miracle whip
3/4 cup of shredded cheddar cheese
1/2tsp garlic salt
1/2tsp rubbed sage
1/2tsp onion powder
1TBS ranch dressing
2TBS dill relish or sweet if you prefer.
A couple splashes of hot sauce (optional)
Salt and Pepper to taste.


We like them on Kings Hawaiian rolls, but any bread works fine.



Make sure to mince the skin well or you may get a chewy texture



Add all the ingredients to a 2 qt mixing bowl



Mix well



Serve and Enjoy!

Betcha the fried chicken is really good! FWIW I've not been beyond getting a rotisserie chicken and turning the whole thing into chicken salad. If it's good rotisserie it makes killer salad. I keep the carcass and make a pot of soup too.
