This is the best I can do in my current condition without many pics.I filleted 30 of them last night...-Cut through the top of the fish right behind the head.-Use your sharp fillet knife to slice length-wise as close as possible to the dorsal fin and beyond on each side.-When you come to the rib cage start working around it, preserving as much meat as possible.-Avoid cutting into the viscera/egg/sperm sack. This will take some practice.-When you get to the belly use scissors to cut off the fillet.-Place that skin down on the cutting board (which you should have been using this whole time) and use that flexible blade to shave it off of the skin...-The final product should look something like this:(Image removed from quote.)Hope that helps! 8)
