I keep the "pup" lake trout to fry up and eat right away, or sometimes smoke up.  My question is are any fish over 28 inch suitable for eating? More meat but more fatty/muddy taste.  Any thoughts on that one?

Different critter but in this neck of the woods folks have a issue with the muddy fatty taste of cat fish over a couple of pounds. I myself only keep the ones that run just up to 2 lbs. I have seen where folks will soak them in milk over night, they say that helps.

also, they're illegal to fish for around here but i would guess sturgeon fall into that category.

its not just the taste that could be bad!  make sure you all read the advisories in your areas.  use a little common sense above the advisories too.  im not completely sure they tell the entire truth in some cases!

 lake erie for example is one i believe to be under rated as far as toxins go. but if they put out an advisory the billion dollar fishing industry would suffer.  im suspicious that they are keeping whats really in those fish under wraps.  think about it most all the rivers that feed erie have consumption advisories and the lake is lined with pollution dumping industries.  yet, people constantly take 10#+ eyes home to feed their children!  think before you eat.

In general, bigger means older.

Size doesn't always determine age.  Some fish just grow bigger faster than other's.  They eat and grow.

Trophy year class or runt year class... something like that too.

Trophy year class or runt year class... something like that too.
Our 20-25 inch lake trout pups are about 9 years old, lots and lots of them and pretty much stunted, daily limit,,8.
