What's your favorite recipe for perch how you cook it?

I blot the fillets dry with paper towel.  Dip them in 1 egg white and milk whipped together.  Dredge the fish next in flour or Panko bread crumbs.  Fry in oil (olive or vegetable) at 350* for three minute per side (don't over cook fish-easy to do with thin fillets).  Put them on paper towels and salt to taste.  Dip in tartar sauce.  Even my grandsons love them and we have a lot of fish fry parties with couples (when they are biting-the fish, not the couples).  We often also have rice-a-roni with fresh sliced mushrooms and new peas.

Throw the fillets in a bowl, put a couple scoops of mayonnaise in, garlic salt, lemon pepper, lemon juice, dill weed, mix it all together, then bake on cookie sheet coverered with tinfoil @ 350° for 10 minutes.

Ok straight from the boss ...roll pieces in drakes batter and fry in oil ...get what you want to eat first trip ..cause the kids just love them ..when your teenager is 16  230 lbs 6'4 size 14 shoe  you have to be quick to get any left overs .
guess when the perch limit changes on C F. TO 10 Guess i will just eat more taters ...lol

Yes just hope he stays miled mannered for a while ...he did a heck of a job last summer helping on my jobs . I think he enjoyed the money too... if i could just get him to fish more...he gets bored easy..

Pride of the West. It a seasoned flour. Pat fillets dry dredge in flour dip in a beer batter per recipe on box then do the 350 for 3 min a side thing in vegetable oil

I do a lemon batter from taste of home. It's great on perch and walleye   Basically dip fish in lemon juice then flower then a batter. If you google it you can find it. Not sure how to post the site on my phone

i have used them for fish tacos i make a green salsa that is really good but have used alot of thr recipes above they are all good

Perch fillets make the best fish tacos. I make a tempura of 1 egg white, 1/2 cup corn starch, 1/2 cup vodka, 1 cup flour, and then add soda water until you have the consistency of ranch dressing. Dip the perch fillet(the batter should be a little clumpy) and fry at 350F in PEANUT oil(very important unless you are allergic). They will float when done, don't crowd the fryer, cook in shifts.
Toast soft corn shell over open flame or in saute pan.
Stuff with fillets, fine shredded cabbage, cilantro sauce, and your favorite hot sauce(cholula)
cilantro sauce is just the leaves of one bunch of cilantro, juice of a lime, cup of sour cream mixed in a blender with a pinch of salt.
Never put cheese on these.
There is a magic that happens when you fry perch or bluegills in peanut oil.
Now where are the perch and who's cleanin them

We make a lot of fish tacos too.
I make this baja sauce that kinda kicks them up a bit. I've used pickeled jalapeños. Fresh ones are crisper. I also add a bit paprika and chopped onion to the recipie and finely chopped purple onion on the tacos and fresh made quacamole since I learned how easy it is to make.

1/2 cup plain vanilla yogurt
1/2 cup mayo (I will sometimes use 1/4 cup mayo and 1/4 cup light sour cream)
1 lime, juiced
1 jalapeño, minced
1 teaspoon minced capers
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon dried dill weed
1/2 to 1 teaspoon cayenne pepper

I recently purchased a FRY DADDY and it is the best!!!!  It cooks evenly, faster, less mess to clean ( splattering of oil all over the stove top), and doesn't stink up the place as bad! Well worth the money!
When there is ice on the lakes, I never make employee of the month!
