Best way to clean perch
« on: Jan 06, 2012, 07:51 PM »
I just posted this on another thread, but thought it would be worthy to show all.  The guy on this video is cleaning a frozen fish, with a very old knife, and thawed fish with a good knife go about twice as fast. Give it a try and I know you will like the results. This works on little dinky fish too, trust me ;D

This is the only way to clean perch in my opinion.  If you have two guys and only (1) electric knife,   one guy with a regular knife can prep the fish with a cut from the anus to the gills, then cut the ribs out after the electric does it's job.

I've cleaned fished using that method for over 2 decades.
Doesn't work so good on catfish, use the fillet knife instead.

I have been skinning perch for years, never filleted them. I can clean a pearch in under two minutes, trim the belly bones at the sink while washing and they are ready for the fry pan.
And so every man shall give account of himself to God!

I'm sure that guy was going slow to show folks how it's done. You can fillet a perch very fast w/an electric knife, I prefer them not to be frozen as its harder to feel the backbone when cutting .

I might give this a try... for years I've thrown perch back down the hole, as they have been a pain in the @$$ for me to fillet...

Tip Up !!!

   Never throw them back down the hole.   Yellow perch (9" +) are fast to fillet and skin and the best tasting deep fried fish of all!!

i started out years ago filleting fish , then my electric knife crapped the bed and i was too cheap and lazy to get another ...
for the last while i've been making 2 cut along the back from the back of the head to the tail , peeling the back fin off , then cut from the back down 3/4 of the was down behind the gills and peel the meat from the rest...
goes pretty quick but still have to separate the meat from bones but with a little kid to watch , i may have to go back to filleting like i do with lakers  :-\

Been doing it that way since the 70's. works on everything except for catfish as was said. He is pretty slow tho. Pike you need to go back and remove the Y bones... makes short work of walleyes.
