Pan fried drum...

Fished Little Bay the other day and caught a decent Sheeps Head. I always wanted to try one so I brought home an skinned it and fillet it out. Well I pan fried it tonight and while cooking, it smelled just like a handfull of black dirt. The first bite tasted like black dirt. The second bite tasted like black dirt and the rest of the fish went into the garbadge. So take my word for it and just throw em back in.
When hell freezes over Ill Ice fish there too

I have eaten more than a few drum but you need a lot of spices and a good coating mix. I would fillet them like walleyes. A half bottle of tequila before you eat them wont hurt

So your saying they taste just like beets then?? Nobody ever brought me fried drum  so I pretty much thought it was not good.

Red Drum on the other hand (from the salt AKA Redfish) is excellent!  I thought they might be related but by the description of the flavor, def not.....thanks foir the info, saves me the hassel of cleanning a rotten fish..LOL

Now heres a recipe for drum. Fillet it out like normal, put some olive oil all over it. Season with your favorite seasoning mix and some hot peppers. Place the fillet on a cedar plank, place on grill. Cook 8-10 minutes per inch of thickness. When your done take it off , throw away the fish and eat the cedar plank....gonna taste better than that drum  ;D ;D

I have heard of people eating sheephead and claim that the best way to eat them is to fillet them out, cut them into chunks and boil and serve with cocktail sauce or other dipping sauces.. might be worth a try?

I guess I have to disagree with you guys.  I've had Drum/Sheepshead a couple ways and both were perfectly fine.

Don't keep the jumbo ones, just the mediums.  We either fillet them and poach them in butter with a little salt and pepper (come out like poor mans lobster).  or chunk them up and pickle them!   Texture is like any whitefish and they go down good.

Me to I'v hade them deep fried in beer bater and they were really good.

Same principle used with smoked suckers!! :clap:

Sucker meat has a similar texture to poo... to bad they are so much fun to catch.

I know people that eat drum and like it, they tell me you can't freeze it (this was the OP's problem I think) because it isn't any good when thawed. They like the small ones, 2-3 lbs.

Drum recipe

1 large drum, uncut and frozen
1 oz of whiskey
4 bacon strips
1 Tbsp butter
1/2 sliced onion, in rings
1/2 green pepper, ringed
2 slices provolone cheese
4 oz roast beef
1 sliced half of small french bread


Sautee onions, bacon and peppers in melted butter, while heating roast beef. Layer roast beef on bread with bacon and cheese, top with onions and peppers. Drink shot of whiskey; take bite of
bread; throw long bomb with drum over fence into neighbor's yard.   ;D

when properly cleaned with the mudline and redflesh removed the freshwater drum is quite the same as a whitefish in flavor, color and texture.  large white flakes of meat, slightly oily.   great smoked. like suckers,  better in ''fish pattys'' or ''fish balls'' after being ground up and mixed with eggs, cheetos and deep fried.           certainly not walleye, perch or bluegills but, not bad.       soak in milk or saltwater overnight  will definately help after properly cleaning.

Maybe I will just fry the eggs, drink the milk, eat the cheetos, and throw the drum back in the lake! ;D

I know if you clean them juuusssttttt riggghhhhhttttt..... you have a fleck of meat on top of the tail that does not taste like fertilizer, but I think the ecosystem needs drum, sheepshead, suckers and dogfish more than my freezer! ;)

Tulibees smoke well, and I can get my hands on plenty of them. They always poop on me when I unhook them, but they at least look and taste like something edible.
