One Way to Eat a Walleye

I would like to talk about the elusive WALLEYE and one way that I like to prepare the tasty fish.

Okay, so the first thing you gotta do is get yourself a walleye or two. Unless they are little, then you better have a few more. Myself, I like to catch the big walleye.





Nice limit:






Now, you gotta fillet those babies up and skin 'em down!












Results may vary!





Now you start the stuffing!

Saute up some celery and a good amount of onions. Don't be skimpy with the butter! Wait until the onions are translucent before you throw in a few cloves of chopped garlic.

Have your rough chopped bay scallops, shrimp and crab meat on the ready.













Now add your scallops and let them cook until JUST done. Then add your chopped up cocktail shrimp (or use raw and cook with the scallops) and then put in the crab meat without eating all of it.

Add more seasoning! Don't be shy! I like to use sea salt and lots of pepper as well as a little tobasco sauce.

Stir only enough to incorporate ingredients! You don't want to mangle the chunks of crab any more than you have to!















Now, put in some seasoned breadcrumbs and maybe some more seasoning. Taste it and add until it's to your tastes.

Put the stuffing into the fridge while you prepare your fillets.

DON'T KEEP TASTING the stuffing or there won't be any left!








Then, I transfer to a bowl and pop the stuffing into the fridge until you are ready to stuff your fillets.









Now, section your fillets into three sections after removing the row of pin bones. You have your belly meat, your prime cut loin and your tail section.






Then using a super sharp fillet knife, make pockets in the fillets. Take your time, the end result is worth doing a good job.







I save the belly meat and clean it up real good. (You can see in the picture above, I have cleaned the belly meat of the "silver skin".)  It makes a nice sandwich- breaded and fried! Or I save it to use in my next seafood stuffing.




Now it's time to stuff those pockets!

Since I was making something so yummy, I made extra so that I can hook up my parents and next door neighbors and still have some for the freezer.

It's ALWAYS better to make too much than not enough. You gotta think of others, ya know?

















Now it's getting closer to dinner time.


Squeeze some lemon, sprinkle with some (more) seasoning, if needed, and dab with (more) butter!

Broil them until you lift with a spatula half way under and the fillet breaks. Careful not to overcook them!
















YUMMY.


When it comes to fresh water fish, the walleye has no match. It's the best eating of them all, hands down.

   You put some time in that post and in the preparation of that meal!!!  Great job!! Now I'm going to half to cook up some late night waldo's, I'm with Eddierod, I wouldn't have made it past the scallops!! ;D

Thank you, everyone!  Thank you very much. 

I love to cook and eat Walleye, but not as much as I love to catch them!  Unfortunately, I cannot disclose the location that I nailed the hogs you see in the pictures.  However, this doesn't mean that I wouldn't trade the secret for another secret!  You know how it goes.  Also, all my Walleye are from soft water.  I haven't ever had the pleasure of getting an 'Eye through the ice.  To be honest, I am not as good on the ice as I am in soft water.  This is something that I am trying to change.  I am reading this site daily and doing my research. 

I intend to get out this year more than previous years.  I want to put my (almost) new shanty to good use.  The smelt fishing is a riot and I have had a good time doing it, but I want to get into some perch, trout and maybe some WALLEYE real soon!

Thanks again for all the excellent comments.  I am glad to be here.  I like iceshanty.com a LOT!

Okay, okay, maybe I WAS gloating.  But I tried to exercise some restraint!  For instance, I didn't include a picture of my beautiful wife eating the Walleye.  (On a side note, my wife will eat nothing that I kill except for Walleye.)


I hope to find me a Walleye or two through the ice this year.  My time cruising these forums only confirms that I think this may be my best year yet!  I am filled with optimism!
