Pretty slick...I normally fillet my perch as the wife doesn't like to deal with bones.  I will try it like this though, I like the dorsal fin and skinning trick and remove the meat from the backbone/ribs afterwards.

I used to clean my perch that way all the time years ago..... It does work really well on small ones but I fish more for white perch now and it doesn't work so well on larger fish like that in my opinion. Plus I can fillet them in almost the same amount of time when I get rolling and no bones to worry about after.

Something to keep in mind though is that fish cleaning, especially perch, is a lot like skinning a deer. If the fish is the right temp cleaning is really easy but if it's warm and slimmy it's harder and if it's frozen then it's really hard.
