You can also freezer set your coating. I put my filets out on wax paper with a cookie sheet underneath for 5-10 minutes... I’m impatient.

Yep! It really makes the coating stick to the fillet. Really in between a true dust and a batter. Lots less messy than a batter and more controllable than a light dust. Let the flour and moisture do it's work. Time for an extra martini  ;)2

So I figured I'd take a few ideas from this thread and try some out for our slabs and WP on Sunday.
Filets on right were made with Toasted onion crackers rolled/crushed, Lawry's, dried minced garlic, fried in peanut oil. Came out awesome!!
The others on the left I tried Bills recipe (with club soda) but I must've messed up somewhere along the line. Sorry bill ;D trial and error I guess. They looked nothing like in his picture(his looked to die for) Coating ended up too puffy and very much like pancake mix, so they browned/blackened very easily.
It was cool just to try something different from my normal italian breading/flour mix. Thanks for all the ideas guys. May try something else here another time.

Catch. Fillet. Seasoned flour. White pepper garlic smoked paprika touch of cumin. Black pepper and salt. Egg let stand for a beer or two. Parmesan breadcrumbs with a little fresh parmesan added. Let stand for another beer. Release into hot oil to swim again. Squeeze a lemon on it. Flick the seeds off and down the hatch. This is what I do for Whites and crappie

I found that when I cooked mine in a pan the oil got to hot, so I ended up using a deep fryer which managed the heat..
On my first attempt..the batter was to heavy an fell off so I added more club soda..by third third time I figured it out..
I like the toasted onion cracker idea.. may try that this weekend

(Another good one I've used was some rosemary and herb crackers...and not just on fish! )

Alright now we have gone to far... that could be the game changer.. do you put them in an egg wash or milk wash 1st or just skin them bag and shake.

Crap me too. Sorry about that. Still how I do it though. If fish is wet it will stick but egg wash will be better. Flour than egg then funnyuns even better.

A crappie : TACO WEDNESDAY
Used a simple flour mix today with salt an pepper an paprika, dipped in an egg wash..I let them rest for about 5 min while the oil heated up
A simple homemade coleslaw on top added to the hardshell taco

I just want to go ice fishing and ignore my adult problems

Flour with salt, pepper, and a some cayenne...maybe some old.bay seasoning. Then dip in egg, and panko...into the deep fryer it goes! 

Usually end up doing fish tacos...flour tortillas, quick pickle slaw, and sriracha aioli...so damn good.

Brought a 12 inch yellow perch home today to fry up.

Wife filleted and dissected the fish and I cooked it up.

I used the coat and let chill/set method on the coating. That turned out great and the coating stuck and stayed on.

Thank you esox for that idea.
