looking for some baked panfish recipes

Got a bunch of fillets left and looking to try some new ideas. Anybody got ajy they want to share?

Shake N Bake, whichever kind you prefer. Doesn't matter if you use the ones for chicken or pork.

1) fillet fish (boneless)
2) pre heat oven 400
3) smear a small amount of real mayo (not m-whip,,,yuck!) on one side of each fillet
4) press the one sided mayo into panko brean crumbs and a little parmisian cheese
5) spray cookie sheet/foil with pam (butter flav is nice)
6) bake 10-15 or until litly brown (test with fork)
7) salt and pepper to taste
8)eat!

Hoo, ah! That's something I've got to try. I've coated them with crushed white cheddar Cheeze-its.

Yeah the chip coated was awesome. Going to try some bbq chips next time. Cheezits sound great too

Baking Magic.   Fillets just need to be wet.   Fast and great tasting.
10% of the fisherman catch 90% of the fish .....im a 10% are you?

I have a good baked recipie we like sometimes.
  Pre-heat oven to 400 - put a little oil in a baking dish - put some fish fillets in the bottom of the dish - In a bowl mix together 2 cans of diced tomatoes {I drain some of the liquid out},1/2 cup chopped onion,2 or 3 crushed garlic cloves,a little thyme - mix together and spoon over the fish - top with bread crumbs and some parmesean cheese - bake for 20 minutes. I like this recipie when I want something other than fried fish.I also use basil,garlic & oregano diced tomatoes.

I've never baked fish, always fried. These recipes sound so tasty that I can't wait for lunch to try. Much thanks to those who shared their recipes!

So you only coat the one side with the panko/parmesan?  Am I correct in assuming that you bake it with the panko side up?  I will be trying this one.

These are on the Weber, but in this weather I do the same in a hot oven....475 degrees

spread a layer of fillets on a pan
light coat of garlic oil
spread a good salsa to cover
Top with what you like ( I like some chopped olives)
sprinkle with shredded Parmesan or Asiago cheese

Bake or broil

Really delish!

if you like baked look up fish Spencer tasty and quick , if you like cream of mushroom soup spread some on the bottom of a pan , then lay fillets in and cover with the rest of the soup , and no water bake at 350 , I like all my fish fried , butter salt pepper , and nature seasoning

i have a good broiled recipe, basically the same thing. soak the fillets in caeser dressing for one hour. put them on cookie sheet and cover with parmasean cheese, broil high for 5-10 minutes. delicious.
It's all about the girth!

We just had perch omelette's on Sunday.

Skin the fillets, bake with a little salt and pepper (we just use a toaster oven)

Put them in your omelet with a little crumbled feta and cheddar.

Toast from fresh baked bread and you have a breakfast to remember.

Baked pike in an omelet with some cream cheese and slice green onions is also really good.

fish omelette's are great and the possibility's are endless.

We even make a Salmon hash topped with a couple poached eggs and melted pepper jack.

Fish for breakfast is common in our house on the weekends.

Enjoy.

Slice up a stick of butter and lay in bottom of pan. Place fillets in pan. I like to kinda overlap them on the belly meat. They will shrink up and kinda hold together this way. Then season with whatever you like. Cajun or lemon pepper are good choices. You can do 1/2 pan one seasoning and the other half something different. No seasoning is good too. Then put crumbled feta all over the top and bake! Turns out awesome every time!

Awesome....I just started making egg and fish omelet's this year. Great way to eat the left over fish...IMO. I also like to take the eggs and fish and put it on some soft shell tortillas with some salsa.

Ya know whats so great about "The Shanty" ? All the stuff that gets put on here :). I was reading down through here, & thought about all the flour tortilla shells I have in the fridge. Been eatin lots of "perch Tacos". I was thinkin, what  about  a fish  breakfast burrito ?Looks like it might be for dinner  tonight ;D. Thank you to all ,for all the great recipes.

this is my personal fav all my family and friends love it! bacon wrapped walleye/perch ... I preffer perch it holds the lemon taste better/stronger...
simple reciped take lemon juice and pepper put in bowl...
open a package of bacon
cut the perch or walleye into 1 inch or 3/4 squares
toss chunks of perch or walleye into the lemon juice and pepper let marinade for 10 mins
wrap squares in bacon
toss in frying pan with butter (for strong lemon taste pour the lemon juice and pepper in the frying pan and cook )
cook until bacon is desired I like chewy bacon the gf likes crispy the choice is yours normal 5-15 mins

put the filets in a baking dish side by side sprinkle panko breading on them with a small amt. of butter try different spices or just s and p 400 degree 20 min

Me too .....  a couple of healthier options are great ... thanks!

I would imagine you could do poormans lobster too   ;)

Bring water to a boil .... take off of heat and put fish in water for 15 minutes, then drizzle butter on fish and put under broiler for 3 minutes.

It works great with cod and striper ....  maybe a little less time in the water since the filets are smaller.
Goin' where the wind don't blow so strange,
Maybe off on some high cold mountain chain.

There's a dish I make for our annual Game Dinner that's been a hit for years. A fellow dropped off a bunch of perch fillets one year and I needed to come up with a dish.

1 batch of perch fillets
Seasoned Italian bread crumbs
2 bottles of low or non fat ranch dressing
juice of 1 whole lemon + 1 tbsp zest
ground sea salt
ground pepper

In a greased casserole, cover the bottom with ranch dressing....just a thin layer
layer perch fillets
season with salt and pepper
cover with a layer of bread crumbs
sprinkle lemon and zest on the bread crumbs

repeat this for 3 layers....dressing.... ... fish.....crumbs ...seasonings

top with some of the ranch dressing, bread crumbs and lemon.

Bake at 325 till done.

It's pretty tasty and disappears every year.

Spray a glass baking dish with pam lay the fillets close together and cover with Frito Lays, Ranch flavoured chip dip. 20 mins at 325F.

soak fillets in either milk or vinegar for 10 minutes to kill that green fishy taste the vinegar is cheaper so keep it in mind. after that moisten the fillet in water dip in shake and bake and then bake at 350*F till white and flaky.  buddy has his bass this way all the time the milk or vinegar kills the heavy green fishy taste on fish it does work...

also there is this one with a spicy Tatar sauce. i just use the tartar sauce with any fish i have make it pop...




  Fried Whole Crappie with Parmesan Peanut Crust
Ingredients

7 – 10 crappie. cleaned and dressed with heads removed
1/2 cup Italian breadcrumbs
1/4 cup cornmeal
1/2 cup grated Parmesan cheese
1 cup dry roasted peanuts, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup all-purpose flour
1 cup buttermilk
peanut oil for frying
Spicy Tartar Sauce
1/2 cup light mayonnaise
2 tablespoons sweet pickle relish (or better yet... Wickle’s Hoagie Relish
1 teaspoon spicy brown mustard
1/4 teaspoon creole seasoning
1/4 teaspoon hot pepper sauce
Combine all ingredients.
Instructions

In a shallow bowl mix bread crumbs, cornmeal, Parmesan cheese, ground peanuts, salt, and pepper. Coat each fish with flour, then dip in buttermilk, then coat evenly with crumb mixture.
In a large skillet, heat 1 – 2 inches of oil over medium high heat. Add fish and fry on both sides until golden brown. Drain on paper towels.

You can do this same thing with zezty Italian dressing also.  More soak time equals more flavor.

Here is similar tone already posted.  You can do this in a pan or bake in oven. 

Take a can of diced tomatoes juice and all dump in pan or dish chop up some onion and garlic and sprinkle in the add some old bay or crab boil in at and stir just to mix.  Place fillets on to of mixture and sprinkle with old bay also bake until flakes apart.

You had me at bacon.  The wife gave it 7/10 and she's not a big fan of fish.
