We got hooked on using instant mashed potatoes - stays super crispy, doesn't soak up the oil - just make sure the oil is real hot - add your favorite seasonings; you can do an egg/milk wash to help the flakes stick. Inexpensive and MUCH better than fish crisp, at a buck a bag - its worth trying, you won't regret it.
Mother did up a batter the other night of just flour butter and water. It's fantastic. Going to go with that for the fish fry this weekend. Thanks again for all the ideas. I will be sure to try most of them sometime in the future!
