Boiled perch ,walleye or gill taste great dipped in some cocktail sauce.
Boil and then chill in fridge. Pretty much Nor's fresh water lobster ;D

another favorite is baked fish in a glass pan with crumbled chips and sprinkle some mozzarella cheese.

I have made a Fish Chowder in the past by making the same base as for Potato soup with ham but use bluegills instead which were marinated and broiled prior to mixing with soup stock. Needs additional seasonings to replace the flavorings lost in the ham.

&feature=fvwp&NR=1

You could use a Clam Chowder base then use Bluegills or Crappie instead. You can use up more actual fish this way with out the deep frying. Dont get me wrong, I love the deep fried gills and perch but the batter and oils don't love me anymore.
Deep frying is conveinant and tasty But I had to cut a few pounds and this helps a little. The oil from frying tonights catch is still hot, Its hard to give up cold turkey !

My wife loves this recipe.

lay whole filets in a non stick, or lightly greased cookie sheet.
sprinkle with granulated garlic, finely chopped onion, and finely chopped bacon, in that order.
broil until bacon is done, then sprinkle with real parmesan cheese.
this goes well over rice.
If your gonna be dumb, You gotta be tough.

Thanks for the replies fellas!! The past 4 days have produced 138 bagged and frozen bluegill fillets for me!  Time to try some new ways of cookin em, and thanks to you guys I have a few new ways to try!  Took a couple and left em whole today, gutted em and cut heads off and cooked em in olive oil.  Havent had em like that in a while and BOY was that ever good! I like that way b/c you get to taste the flavor of the meet and not just the breading.  Good luck and stay topside.

WTG vex on the fish. One alternative we do is roll them in flavored breadcrumbs, put in a Pyrex dish, drizzle with warm butter and a little parm cheese and bake.

Cube your fish about 1-1 1/2 inh square, wrap 1/2 piece of bacon (you can use turkey bacon too) around the fish and spear it with a toothpick to hold the bacon on and put them on the grill. Turn them about every 10 minutes and when the bacon starts to crisp up dab with some sweet baby Ray's B-B-Q sauce, about 2-3 times, let the sauce cook on and you are ready to go.
