Well, I did some experimenting today.
How about a Fish Braciola
Start with a couple of fillets ( this is Swai), pound them out a bit.
I hit them with some cracked pepper and sea salt, a good layer of baby spinach and some chopped raw shrimp..
I topped that off with a sliced hard boiled egg, Goat cheese and chopped Cilantro.
Roll it up, tie it up and brown it a bit in a light oil. Another shot of cracked pepper and sea salt is good. Pop the pan in the oven at 400 to finish
When it gets to about 160 inside, remove it to a plate to rest. De-glaze the pan with white wine, add chopped garlic, butter, half and half and some cilantro. Simmer and reduce by 1/2.
Plate it up and enjoy!
