An easy-peasy weekend meal...

(Or you can use it to stuff a 🌮 or a taco 🥗 if ya want)
1 pound 85/15 ground chuck
1 can of black beans, drained (or pintos)
1 to 1 1/2 cups of chopped white onion
1 cup of chopped green peppers
1 chopped, seeded jalepeno pepper
1 can of sliced black olives, drained
One small bag of frozen corn (optional)
1 -2 cups of chunky salsa (your choice)
2 cups of 3 blend Mexican cheese or sharp cheddar
1 can of red enchilada sauce
1 package of taco seasoning
1 package of Spanish rice
1/8 tsp dried cilantro
Directions:
Brown the burger, drain grease, then add your taco seasoning. Put the burger in the crock pot first. Layer the beans, pepper & onions next. Then put the rice on next. Cheese & olives next, then corn, then salsa...and last is the enchilada sauce.
Cook on low for 6 hours.
Wrap in a tortilla with shredded lettuce, chopped 'maters, sour cream, taco sauce & guacamole.
