Walleye Stuffed Poblanos

(Sorry kind of a crappy pic)
Got creative with some Walleye. Modded my Stuffed Poblano recipe, I usually use breakfast sausage.
Pretty easy, kinda time consuming, but ooh so good.
Ingredients;
Walleye fillets (cubed thin)
Poblano Peppers
Potato
Green onions (scallions)
Goat Cheese (chèvre)
Salt and pepper

I blister some Poblanos with a propane torch, put 'em in a freezer bag for a bit and then peel the skin off under running water.
While I'm doing that I dice some potatoes and boil til they're a little soft. Rinse the starch off in a colander with cold water.
Slice up a bunch of Scallions (green onions) I use the green parts too for this.
Mix the Potatoes and green onions together with some salt and pepper. (The freezer bag that the peppers were in works great.)
Slit the peppers open, cut the seeds out and rinse.
Put a small layer of the potato mix in the pepper followed with the Walleye chunks on top of that. Crumble a bunch of Goat Cheese on top of that. Squeeze the pepper together to compress the fillings add more if there's room. Open it back up and top with some more potato and some more goat cheese for good measure. Cook on a cookie sheet at 350 for about an hour pull em out, let em rest for a few, throw it on a plate, crack a brewski and ENJOY!

Hell yeah, a sprinkle of Joes Hot Stuff helps too! (I don't know where you catch your fish, but mine don't come seasoned.)  ;)

Poblanos are my favorite peppers, man a walleye with those sounds delicious!

Muy sabroso. Poblanos are the perfect pepper for that concoction. Personally, I'd probably drop the chevre in favor of some queso fresco. The Rib doesn't care for goat. I like the way

the Colorado board has taken on elements of The Cooking Channel. Still heavy on the fish tacos but, oh man, what fish tacos. Wish I had some chunky trout to smoke or a

couple of hefty Northern filets to transform into quality table fare as you've done. Come on ice.

I agree, I like the recipe exchange.  For me, a huge part of fishing is the harvest and preparation of ingredients that can't get any fresher.  Farm to table they say, or in this case, lake to table.  My family is definitely getting more on board with awesome perch and walleye recipes, but not so much the trout.  I'm hoping to smoke some kokanee this season, so we'll see how that goes.

Hey, Slayer --- wonder if you'll still have some of the walleye fillets from this fall for a big fish fry at our annual ice gathering...I'm sure we'd all love to try the famous Slayer fish fry.  It's not like you'll have any COWORKERS in January to share them with any more...  ;)

Sounds awesome. Now brewski more importantly. What kind of beer pairing are we talking. You recommend a PBR or any cheap beer rodeo or upscale to a bud light platinum?
