Walleye caviar, how to?

Caught a large walleye friday night that has some large egg sacs. Anyone ever make walleye caviar?

This is silly. Each state sets the limit and parameters of their fish and quota allowed. No matter when you catch a fish you are taking g away for that fish yo do their part in reproduction.
 If it was harming the population so much the state DNR would close limit all our limit taking of certain fish.
Just tired of hearing that.

I have had perch eggs before Grandpa loved them. Even deep fried it was like a strong fish flavored sand.

the lake i was fishing is stocked by the state of connecticut and the eyes arnt even expected to breed. Regardless recreational fishing isnt what kills fish. Thank dams, pollution, and industrialized commercial fishing for that

BTDT.........not with walleye but pike. Just seemed like too much to waste. My great-grandmother used to love bluegill egg sacs fried in butter. Every time Gramps and I went out, after we were done cleaning, we'd always take his Mom a few "pan dressed" 'gills and all the eggs.

I've tinkered with "caviar" a couple of times. To begin with real caviar is an acquired taste...... That said, I never really acquired it so I don't have anything to measure against. I am a fan of the flying fish roe you get at the sushi bars, but that's different.

The best, common sense, procedure I saved as a Word doc. This person used steelhead eggs, imagine that, eating them instead of using them as bait...... PM me and I will send the procedure. A little lengthy to post up here.

In the end, if you enjoy that kind of stuff I thought mine turned out salty, modestly fishy, had some texture rather than mush.......they were OK but not something I'd rave about.

Perhaps a litre of aquavit would temper that opinion.......... ;D

I would love to have a way to make caviar please pm me the way it is made , i would think that it would work for any type of fish eggs.

have never tried walleye eggs...but I do enjoy the perch egg sacs!  I split them and fry in butter with salt and pepper, then sprinkle lemon juice on them...mmmmmmmmmmmmmmm mmmmmmmmmmmmm!

Not caviar but on perch I carefully cut the belly and take the sack out whole. Then deep fry. YUM It should work with any egg sack. Just try to keep it whole and not broken for best results.

X3. Half the keeper fish I catch this time of year are egg heavy on the Saginaw river/Bay here in MI. We have more 1-2 year class fish than we know what to do with. Thousands fish this every single weekend, and hundreds every weekday.. Yet our fish numbers keep getting better. Natural reproduction more than makes up for those harvested.

I'd pour 4 oz of good whiskey in a glass, pour some olive oil in a pan, fry the eggs in the oil, salt, and pepper, let cool down in the pan, drink the whiskey, then throw the pan out the window.  ;D

To each his own, but I'm interested too. I have always wanted to try salting the roe at home given perch and walleye eggs are about the same size.

Greeks and Turks make a salted fish roe salad called taramosalata. Other Eastern europeans make something similar too. Its typically made from salted carp roe and bread. If you are interested in trying it, get it a Greek restaurant or someone's house. DO NOT try the premade stuff in the jars- its like mayonnaise.
