Interesting sounds pretty good. Like the old bay touch.  when i moved to Maryland found out  they put it on everything popcorn, steak, even can buy old bay flavored potato chips lol

It's not that fishing is so important, it's just that so many things in life are so much less important

Here's another way to fry up eyes, perch etc. .....I use a mixture of 2 parts progresso italian bread crumbs, 1 part panko, and 1/2 part of Old Bay.....I take the fish pat dry very well.....soak for a few seconds in egg wash (which is seasoned with Old Bay too).....dredge in crumb mixture......fry in a cast iron pan with peanut or cottonseed oil. Its a real hit with all my friends. They love it! .....just my 2 cents.

I've heard of the instant potato trick, gonna have to try it soon.  My brother and I fried up some perch with a final coat of crushed up ritz crackers once.  Sky's the limit with fried fish..lol

Just fried up first batch with the taters....excellent! Didn't have any OldBay, but very good none the less.
Batch two was a mixture of taters, Panko, and Italian bread crumbs....Awesome! Thank You for the recipe!!
